Individual Char Siu Meatloaves

Char Siu is a Chinese sauce used in Cantonese cuisine. It is traditionally made with honey, five spice powder, red fermented bean curd, dark soy sauce, hoisin sauce and rice wine. Though today, it also contains red food colouring, which gives it, its distinctive rich red colour. The sauce is generally used as a meat marinade or glaze especially for Chinese BBQ pork or as a flavouring for BBQ pork steamed buns eaten at Yum Cha. This recipe uses the sauce as both a flavouring and glaze and is a perfect main course menu option for a lunch or dinner service or a Chinese themed meal.

Method

  1. Pre-heat an oven to a moderate temperature – 160°C.
  2. In a suitable container for mixing, add the pork mince, first quantity of char sui sauce, first quantity of garlic chives, long red chilli, soy sauce and coriander. Mix to combine.
  3. Lightly spray oil the required number of muffins trays.
  4. Fill each muffin tray cup to just below its rim with the pork mixture,  ensuring the mixture is firmly packed into each mould.
  5. Evenly distribute the second quantity of char siu sauce on top the meatloaves, evenly spreading it with a pastry brush.
  6. Place the meatloaves into the oven and bake for 25 minutes or until the meatloaves are cooked through. Remove from the oven. Set to one side for 5 minutes. Remove the meatloaves from the muffin trays.
  7. Garnish the individual chars siu meatloaves with the second quantity of finely sliced garlic chives before serving.
